I would say don't do the pickles with the ham as there are a lot of flavours already going on , but yes to the pancetta in the bubble and squeak.

Is that what your guests will enjoy, only if they're Iceland buffet fans they might not. I always do a nice spread plus a few beige bits for my in laws who don't really enjoy food.

yy to pickles with ham and cauliflour cheese.

I wouldn't do bubble and squeak though... too much going on. I would serve it with a plain carbohydrate, like jacket potato or even fresh bread.
