So, Santa brought me a soup maker...

And apart from chopped veg I am not sure what to do with it. Am diabetic, low carbing so veg is good, but could do with protein and fat as well. Recipe book is limited to say the least.

How would you make a creamy chicken soup or similar in one of these beasties? Or am I over thinking it?

Anyone else got one and can share tips? It is a Russell Hobbs if that makes a difference?

I got one too and think I'm just going to use my usual recipes and see what happens! I normally make a carrot and coriander soup on the hob so can't see how it would be different in the soup maker. For a creamy chicken soup, I would cook the chicken first if necessary then put it in with stock etc that you would normally use. Agree the recipe book is a bit rubbish!

First batch done, lots of chopped veggies (thanks to my JM food chopper thingy on sale in Sainsbury) a jelly stock cube and bit of salt and pepper. Went down well, took 21 minutes to cook, and the machine was easy to clean afterwards.

Impressed so far Grin

Best bit is that I can do other things while it is working and do not need to hover over the stove stirring to make sure it doesn't burn.

It is like a big tall kettle with a chopper blade attached. Put stuff in, switch on, come back later and soup is ready and nice and smooth.

Just made some carrot soup to put in the freezer, was slightly thinner than usual so next time would use less stock but had a little teaspoon and it tasted yummy. Very easy to do, chopping the carrots was the hardest bit, very easy to wash up too. Shame I'm the only one in the family who likes homemade soup Hmm

I have a brand new and sparkly jml slicer dicer, £15 in Sainsburyy, took longer to peel the veg than chop it. Grin

I love my soupmaker in a slightly alarming way! I have had the Waring one for a year now and its out at least twice a week!
I have a handful of recipes that i lifted from a book of my mums, if i list them, let me know which you fancy and i will post the recipe?
Beetroot and Apple
Butternut and Orange
Carrot and Lentil
Courgette and Pea
Cream of Chicken
Creamy Parsnip
Leek and Potato
Moroccan Lamb
Smoked bacon and Lentil
Potato Bean and Chorizo
Tomato with Meatballs

Creamy Chicken
180g Chicken, cubed
1/2 Onion
1 Potato
50g Celery
1/2 tsp garlic salt
1/2 tsp dried sage
1 chicken stock cube
salt & pepper.

2 Tbsp Cornflour - mixed with a little water
50ml Double cream
5g chives(optional!)

Put chicken, onion, potato, celery,garlic salt, sage, stock cube into jug.
Add around 600ml water and season.
Cook on high for 7 minutes then low/simmer for 20 minutes.
Blend.
Add cornflour then the cream.
Garnish with chives.

Tomato and Meatballs
2 Pork sausages
400g chopped tomatoes
1/2 onion
1 Tbsp Tomato puree
1 Chicken stock cube
mixed herbs
10 Fresh basil leaves
Salt & pepper

Remove sausage meat from skins and roll into marble size balls
Brown them with the onion
Add tomatoes, puree, stock cube, herbs and approx 500ml of water
Cook on high for 7 mins and then 25 mins on low/simmer
Add croutons if you wish!

Courgette and Pea

150g Courgette sliced
1 onion
1/2 potato
150g Frozen peas
1 tsp mint jelly
1/2 tsp garlic salt
mixed herbs
1 chicken stock cube
salt & pepper

50ml Double cream
Parsley

Brown the onion
Add courgette, potato, peas, mint, herbs, stock cube
Add approx 500 ml water
7 mins on high then 20 mins on low/simmer

Blend

Add cream and garnish with fresh parsley.

Beetroot and Apple

100g beetroot cooked and cubed
1/2 carrot
1 potato
55g apple sliced
1/2 onion
stick of celery
1 tsp mustard
knob butter
1 chicken stock cube
salt & pepper

Add butter and brown onion
Add beetroot, carrot, potato, apple, celery,
mustard and stock cube. Add approx 600ml water
7 mins on high then 30 mins low/simmer
Blend

Good recipes - I love home made soups but need low fat/calorie ones. Do you think you could use half creme frais instead of double cream?

I am really after soup recipes that are about 120 calories per portion if you have any. Smile
