Stir-fried pork in lettuce leaf cups
Makes 12

Cook time 5 mins
250g minced pork
2cm piece fresh root ginger, peeled
Juice of 1 lime
1 fresh red chilli, halved, deseeded and finely chopped
1 tsp caster sugar
1 small handful mint leaves, chopped
1 small handful fresh coriander, chopped
2 spring onions, sliced
2 little gem lettuces
Heat a large frying pan. Add the pork and fry over a high heat for 5 minutes, stirring regularly to break up. Remove from the heat and leave to cool.
Next make the dressing. Grate the ginger, then squeeze out the juice into a large bowl. Stir in the lime juice, chilli, sugar, mint, coriander, spring onions and cooled pork. Carefully separate the leaves from the little gems and divide the pork mixture among them. Arrange on a platter to serve.
Strawberries in Beaujolais
Serves 6
Prep time 5 mins, plus marinating
454g punnet strawberries, washed and hulled
200ml fruity red wine, such as Beaujolais
50g caster sugar
Mix all ingredients together and marinade for 2 hours, stirring occasionally. Divide among six large wine glasses or small dishes to serve.
