Bacon and egg noodles
Serves 2
Prep time 15 mins
Cook time 10 mins
2 tbsp sunflower or groundnut oil
2 cloves garlic
A thumb-sized piece fresh root ginger, sliced
4 rashers smoked back bacon, chopped
2 eggs, beaten
200g pack baby corn, sliced
100g frozen peas (no need to defrost first)
300g straight-to-wok or cooked egg noodles
1 bunch chopped coriander, chopped
Heat the oil in a wok heat over a medium heat.
Add the garlic and ginger and cook for 1-2 minutes, then carefully remove from the oil and discard.
Turn the heat up high and add the bacon.
Fry for 2-3 minutes until cooked, then add the egg.
Fry, stirring for 1 minute, then add the baby corn and peas.
Fry for 1 minute, then add the noodles and
2 tbsp water.
Fry, stirring, until hot through, then toss through the coriander and serve immediately.
