Recipes – episode 3 – DELICIOUS AND NUTRITIOUS

Everyday soup (base soup)

Makes 8 portions
Prep time 20 mins
Cook time 30 mins

2 tbsp vegetable oil
4 onions, roughly chopped
1kg floury potatoes (such as Maris Piper or King Edwards), roughly chopped
Small bunch fresh thyme, leaves picked
2 litres vegetable or chicken stock

Heat the oil in a large pan. Add the onions and cook gently over a low heat for 20 minutes, stirring occasionally, until soft. Add the potatoes, thyme and stock. Cover and bring to the boil, then simmer for 20 minutes or until potatoes are soft. Cool, then blend in a liquidiser until smooth. Use as a base for other soups.


Spinach soup


Serves 4
Prep time 5 mins
Cook time 5 mins

1 litre base soup (everyday soup recipe, above)
235g bag spinach leaves
Salt and pepper to taste

Put the soup base into a pan, cover and bring to the boil. Add the spinach, then spoon into a liquidiser and blend, or blend with a hand-blender, until smooth. Season with salt and pepper to taste.


Chickpea, tomato and smoked paprika soup

Serves 4 as a starter, 2 as a main meal
Prep time 5 mins
Cook time 10 mins

2 tbsp olive oil
3 cloves garlic, chopped
1 tsp smoked paprika
400g can chopped tomatoes
400g can chickpeas of flageolet beans, rinsed and drained
500ml soup base
20g pack flat leaf parsley or coriander, chopped

Gently heat the olive oil in a large saucepan with the garlic for 1 minute. Add the paprika and tomatoes and cook gently, stirring, for 2-3 mins. Add the chickpeas and soup base. Bring to the boil, then stir in the parsley and season with salt and pepper.   waitrose new
