Bacon, spinach and pea carbonara

  • 2 egg yolk

  • 2 handfuls spinach chopped

  • 1 tbsp oil

  • 1 handful parsley chopped

  • 6 slices streaky bacon or one of those little packs of pancetta cubes

  • 2 cloves garlic finely chopped

  • 300g pasta

  • 3 tbsp frozen peas

  • 3 tbsp creme fraiche


<ol> <li>Bring a huge pot of water to the boil and salt vigorously when boiling. Throw in the pasta, stir and leave to cook according to the packet.</li> <li>Whilst the pasta is cooking, fry the bacon/pancetta pieces in the oil until starting to brown and crisp. Turn heat down, add garlic, cook for 30 seconds, add peas (don't thaw) and spinach. Stir happily for a minute or so until the peas heat through and the spinach wilts.</li> <li>Add crème fraiche to the pan and warm through. Put to one side.</li> <li>Drain the pasta when cooked, leaving perhaps a couple of tbsp cooking water in.</li> <li>Off the heat, stir in egg yolks, they will cook very gently in the heat of the pasta.</li> <li>Tip into the sauce, stir gently and serve.</li> </ol>
