Ingredients

  • 1 onion

  • 2 tbsp tomato puree

  • 1 pinch cinnamon

  • 500ml vegetable stock

  • 1 tsp turmeric

  • 1 tsp ginger chopped

  • 1 small chilli (or 1/2 tsp ready chopped chilli or powder)

  • 1 tsp cumin

  • 250ml red lentils rinsed

  • 2-3 cloves garlic

  • 1 tsp coriander

Method

<ol> <li>Fry onion, add garlic, ginger and chilli together in a pan for 5 minutes.</li> <li>Add lentils, stock, spices, simmer for 20 mins.</li> <li>Add tomato puree and cook for further 10 mins.</li> </ol>

Handy Hint

<p>Serve with brown rice and yoghurt.</p>
