Ingredients

  • 1 onion

  • 2 tbsp tomato puree

  • 1 pinch cinnamon

  • 500ml vegetable stock

  • 1 tsp turmeric

  • 1 tsp ginger, chopped

  • 1 small chilli, (or 1/2 tsp ready chopped chilli or powder)

  • 1 tsp cumin

  • 250ml red lentils, rinsed

  • 2-3 cloves garlic

  • 1 tsp coriander

Method

  1. Fry onion, add garlic, ginger and chilli together in a pan for 5 minutes.
  2. Add lentils, stock, spices, simmer for 20 mins.
  3. Add tomato puree and cook for further 10 mins.

Handy Hint

Serve with brown rice and yoghurt.
