Ingredients

  • 4 tsp sun-dried tomato paste

  • 4 salmon fillets

  • 12 small tender stem broccoli florets

  • 16 cherry tomatoes, halved

  • 16 new potatoes, thinly sliced

  • 1 splash lemon juice

Method

  1. Preheat the oven to 190C/Gas Mark 5.
  2. Take four large-ish pieces of foil, and lay the salmon onto the foil. Spread the tomato paste on top of each fillet.
  3. Add four cherry tomatoes, and three broccoli florets. Then add the potato slices.
  4. Season and a squeeze of lemon juice to each parcel.
  5. Scrunch the foil carefully into a parcel shape, and seal it. Place it on a baking tray and cook for 20-25 minutes.
  6. Turn onto a plate and serve with a green salad if desired.
