Ingredients

  • 1 handful spinach chopped

  • 2 tbsp vegetable oil

  • 1 tsp curry powder

  • 1 tsp cumin seeds

  • 6 cherry tomatoes

  • 2 cloves garlic crushed

  • 2 large potatoes peeled and cubed

  • 1 small red onion peeled and finely chopped

Method

  1. Par boil potatoes until they begin to go soft.
  2. Dry fry the cumin seeds for 30/40 seconds and then add the oil. Fry the potatoes until they begin to go golden.
  3. Stir in the onion and garlic and cook until the onion softens. Add curry powder, tomatoes, salt and pepper and cook until tomatoes begin to break down.
  4. Add the spinach and cook until it has wilted. Serve.
