Baked cod with scallops, prawns, mushrooms and potatoes

Ingredients

  • 1 lemon, juiced

  • 16 small scallops

  • 4-6 potatoes, waxy

  • 1 handful basil

  • 4 cod steaks

  • 4 spring onions, trimmed

  • 1 handful king prawns

  • 1 handful mushrooms, eg: shitake, brown, portobello

Method

  1. Start by slicing the potatoes very thinly, coat with olive oil, salt and pepper.
  2. Place on a baking sheet in the oven for 10-15 minutes at 200C.
  3. Meanwhile chop the onions and mushrooms and fry them in olive oil until tender.
  4. Remove potatoes from oven.
  5. In separate baking dish layer mushrooms and onion mixture, basil leaves, cod steaks and prawns and squeeze over the juice of a lemon, salt and pepper.
  6. Layer the almost cooked potatoes over the top and return whole dish to oven for 20 minutes or until cod is just cooked and potatoes golden in colour.
  7. 5 minutes before dish is cooked, grill or fry scallops with salt pepper and lemon juice. Add four scallops to each serving of fish/potatoes. Garnish with basil leaves.

Handy Hint

Don't add salt and pepper to the fish/seafood until the last minute as it dries them out.
