Spinach omelette

Ingredients

  • 1 pinch nutmeg, (optional)

  • 115g fresh or frozen spinach, washed in cold water and tough stalks removed

  • 2 eggs

  • 15g butter

  • 1/2 shallot, finely chopped

Method

  1. Saute the shallots and spinach in butter in a heavy bottomed pan for about 5 minutes.
  2. Season with salt and pepper and nutmeg.
  3. Beat the eggs lightly with a little seasoning of salt and pepper.
  4. Heat the butter in the pan and cook the omelette for a half a minute in the pan.
  5. Add the spinach and shallots to the omelette before rolling the omelette.
  6. Serve your spinach omelette immediately.
