Ingredients

  • 1 onion chopped

  • 2 tins chopped tomato

  • 1 red pepper chopped, optional

  • 1 tin sweetcorn

  • 1 tsp oregano

  • 2 tins chickpeas

  • 250g bacon one packet

Method

  1. Fry the onion in some oil and then the bacon until cooked.
  2. The lightly fry the pepper if using.
  3. Drain the chickpeas and rinse. Then add the chickpeas to the pan, along with the chopped tomatoes, sweetcorn and herbs. Bring to the boil and simmer for about 20 minutes.
  4. Serve with rice and a sprinkling of cheese if you like it.

    My 2 year old son loves this as do the rest of the family It is also really easy to make so a real winner.
