Ingredients

  • 170g self-raising flour

  • 1 tsp vanilla extract

  • 170g caster sugar

  • 1 pinch salt

  • 2 tbsp cocoa powder

  • 5 tbsp sunflower oil

  • 230ml sweetened soya milk

Method

<ol> <li>Preheat oven 180c/160 fan/Gas 4.</li> <li>Grease 20cm/8in square tin.</li> <li>Sift together flour, cocoa, salt, sugar.</li> <li>Add oil, soya milk and vanilla extract and mix together until completely mixed.</li> <li>Pour into tin and bake for approx 25 mins.</li> <li>Leave to cool for 5 mins in tin and transfer to wire rack.</li> </ol>

Handy Hint

<p>I altered recipe slightly and only added 2 tbsp oil but then added 50g of melted dark (dairy-free) chocolate. The result was good. <br />I also only had a 7&rdquo; square tin but just added 5 mins to cooking time which was fine.</p>

    I have started buying my Dairy free Chocolate for Cooking from D&D Chocolate, their website is www.danddchocolates.com - they sell flakes and dairy free choc chips which are great for throwing in recipes.

    Ds is egg allergic but not dairy so I replaced 5 tbs of sunflower for a combo of 3tbs melted butter and 2tbs of sunflower oil. I also swapped soya milk for cows milk and aadded a small bag of choc buttons to the mix. A winner all round Ty x

    Lovely. My littlest DC cried when they were all finished! I only had unsweetened soya milk so I used a bit less than 8oz and added a big splurge of dairy-free chocolate ice cream topping. Am making them again today.

    Another tip - I made this again at weekend for dd&#39;s birthday and added a mashed up banana at the end and it was alot more moist. Lovely. Also, for a dairy free topping, melt 100g dark (dairy free) chocolate and mix in approx 3 tbsn golden syrup. Allow to cool slightly then smear over top and allow to set.

    Not as gooey as proper brownies, but what do you expect with no eggs & butter! Still lovely and moist.
