Ingredients

  • 1 onion chopped

  • 1/2 tins chopped tomato

  • 2 chilli

  • 1 knob fresh ginger around 3 inches

  • 8 eggs

Method

  1. Fry onions until golden brown, finely chop ginger and chillies.
  2. Add to onions and fry for 2 minutes.
  3. Put in the tomatoes and fry until tomatoes thicken up.
  4. Then crack the eggs into the saucepan and season.
  5. Cover and simmer until eggs are cooked.
