Aubergine mini pizzas

Ingredients

  • 1 tbsp olive oil

  • 2 medium aubergine

  • 1 tbsp oregano

  • 200ml passata or tomato sauce

  • 1 basil

  • 1 mozzarella balls cut into small pieces

  • 4 slices ham, chopped

Method

  1. Wash and chop the aubergine's ends and slice them half a centimetre thick.
  2. Heat up a griddle pan and grill the slices for about a minute on both sides. Line the slices up on a baking tray.
  3. Mix the passata with the oregano, olive oil, salt and pepper and spread it over the aubergine slices.
  4. Put the mozzarella and ham over the passata.
  5. Cook them under the grill of the oven at 200C for 2-3 minutes.
  6. Decorate with a basil leaf and serve warm!

This is tasty, quick and easy to prepare and it is great as an appetiser or as a healthy snack.

    Two important modification suggestions: - rub both sides of aubergine slices with olive oil BEFORE grilling - for mozzarella/cheddar, read cheese, ie neat cholesterol. Not a good idea! And, watch out for the ingredient lists on commercial passata - it may contain palm oil, sugar and salt; best make your own. You missed out an essential ingredient - garlic; a quick rub if you're not a great fan or likely to be doing a lot of kissing, otherwise crush a clove into the passata. Enjoy.

    I just made these - well, I started with the aubergine but we were out of passata so I used red pesto; and we were out of mozzarella so I used mature cheddar. Lovely idea though and delicious - will restock the cupboards and try it your way too!
