Carrot and sausage pasta sauce

  • 1 onion chopped

  • 1/2 tins chopped tomato

  • 1 sausage skin removed

  • 1 garlic minced

  • 2 carrot grated


<ol> <li>Saute onion and garlic till soft. Add sausage meat and encourage it to fall into crumbs with spatula.</li> <li>When the meat is no longer pink add the carrot - you are aiming for about an equal amount of grated carrot to sausage but its not too important - the carrot adds sweetness and the sausage usually has spices already.</li> <li>Cook until the carrot is soft and serve with spaghetti and some black pepper and Parmesan.</li> </ol>

Handy Hint

<p>This is a great 'not much in the fridge' recipe and goes a long way. When I had not made it for ages recently I went back to my mum for the original recipe and found it in a sainsbury's book where it had tomatoes as an ingredient. I only add them if I am stretching one or two sausages round 3 or 4 people and think it is much nicer without.</p>

    Gluten / egg free would depend on sausages and pasta used. Sometimes there is sausage meat for sale but I am dubious about the quality of the meat and prefer good quality sausages - just use less. Have fed 3 from one sausage and a very wobbly carrot on occasions!!!
