  • 85g self-raising flour

  • 85g caster sugar

  • 2 tbsp caster sugar (for decoration)

  • 3 eggs

  • 4 tbsp jam (or more, to cover sponge)


<ol> <li>Whisk together the eggs and sugar for about 10 minutes until very pale and thick.</li> <li>Fold in the flour and then spoon into a greased tin.</li> <li>Bake in a preheated oven at 200C/Gas Mark 4 for about 10 minutes until well risen and firm to the touch.</li> <li>Sprinkle a clean tea towel with caster sugar and transfer the cake onto the towel.</li> <li>Add the jam to the sponge then roll up the cake in the tea towel.</li> </ol>

    This recipe is FANTASTIC. It is really simple, light and delicious. I filled it with a mixture of cream with crushed raspberries and sugar and it was gorgeous.
