Banana buckwheat pancakes

  • 1 splash milk (use enough to make a thick batter, and use soy if dairy-free)

  • 1 tsp baking powder

  • 125g sugar

  • 95g buckwheat flour

  • 1 banana grated


  1. Combine dry ingredients.
  2. Add banana, pour in milk and stir until thick batter.
  3. Cook in a crepe/heavy non-stick frying pan on low/medium until bubbles start to form.
  4. Flip, cook until lightly browned both sides.

Handy Hint

Will keep overnight and can be warmed up in toaster or grill. great with greek yoghurt and berries
