Cod with tomato and caper sauce and couscous

Ingredients

  • 1 yellow pepper

  • 1 red onion

  • 1 red pepper

  • 2 tbsp capers

  • 1 tin tomatoes

  • 300g couscous

  • 400g cod fillet , or any white fish

  • 1 drop lemon juice

Method

  1. Preheat the oven to 190C.
  2. Chop the onion and peppers into strips, sautée them in a little oil and when soft add tinned tomatoes and capers.
  3. Season with pepper and lemon juice.
  4. Tip into an ovenproof dish, cut the fish into 4 even pieces and place on top of the sauce mixture. Season the fish with pepper and a drizzle of olive oil.
  5. Bake in oven for approx 20-25 minutes.
  6. Serve with couscous.
