Mushroom butty

Ingredients

  • 1 bunch parsley, chopped

  • 1 lemon

  • 4 large flat mushroom

  • 60g salted butter, softened

  • 3 cloves garlic, crushed

  • 1 Dijon mustard

  • 4 bread rolls

Method

  1. Mix the butter, a good pinch of salt, the chopped parsley, garlic and spread over dark ribbed side of the mushrooms.
  2. Cook in oven for around 20 minutes at 200C, or until the mushroom cooked and butter melted in.
  3. Spread baps with some dijon mustard.
  4. Squeeze a little lemon juice over mushrooms and place in bap.

Handy Hint

Make yourself two, as one wont be enough… they're scrumptious! Pure heaven.

    Children and adults alike will love this. It is also great done on the bbq, if you wrap the mushroom in foil- perfect for a vegetarian.
