Ingredients

  • 1 onion

  • 2 tsp cocoa powder

  • 1 tin chopped tomato, or passata

  • 1 chilli, add as much or as little as you like

  • 1 red pepper

  • 2 handfuls sweetcorn

  • 250ml red wine

  • 3 cloves garlic

  • 1 pinch herbs

  • 2 carrot

  • 1 tin kidney beans

  • 100g mushrooms

  • 4 handfuls fresh spinach

  • 3 handfuls lentils

  • 230ml stock

Method

  1. Boil lentils in water for 5-10 mins then strain.
  2. Chop veg as small or as chunky as you like.
  3. In the same pan, fry the onion until opaque, add the other veg and garlic.
  4. Add wine, tomatoes, stock and lentils.
  5. Add cocoa, chilli and other seasoning.
  6. Add kidney beans and spinach towards the end of cooking time.
  7. Serve with rice or jacket potato. It's extra yummy with grated cheese on top.

Handy Hint

Use whatever veg you like.
I am a throw it together cook so have totally made up the quantities here - adjust as needed.

    Super. Served accompanied with jacked potatoes and grated Comte. Swapped mushrooms for Auvergne and found no red pepper in my desolate fridge, but still v tasty. Had to cook longer and add stock. Maybe as I used blond lentils. Seves 4 for two meals.
