Mushroom and cheese baked potatoes

Ingredients

  • 20g butter

  • 235ml milk

  • 2 tsp vegetable oil

  • 5 large potatoes

  • 100g button mushrooms

  • 2 tbsp plain flour

  • 60g strong cheese

Method

  1. Place washed potatoes on baking tray - bake for one hour. Scoop out potato flesh.
  2. Heat oil in saucepan and add mushrooms. Stir until mushrooms are cooked.
  3. Heat butter in separate saucepan add the flour and cook it out for a minute.
  4. Grate cheese.
  5. Remove from heat and stir in milk. Stir over heat until mixture thickens. Remove and add half cheese.
  6. Combine potato flesh,cheese sauce, and mushroom mix in a bowl. Divide mixture between potato shells.
  7. Add the rest of the grated cheese to the top of each shell.
  8. Bake for 15 minutes in moderate oven.

Use cheese with a strong flavour.
