Mushroom and cheese baked potatoes

  • 20g butter

  • 235ml milk

  • 2 tsp vegetable oil

  • 5 large potatoes

  • 100g button mushrooms

  • 2 tbsp plain flour

  • 60g strong cheese


<ol> <li>Place washed potatoes on baking tray - bake for one hour. Scoop out potato flesh.</li> <li>Heat oil in saucepan and add mushrooms. Stir until mushrooms are cooked.</li> <li>Heat butter in separate saucepan add the flour and cook it out for a minute.</li> <li>Grate cheese.</li> <li>Remove from heat and stir in milk. Stir over heat until mixture thickens. Remove and add half cheese.</li> <li>Combine potato flesh,cheese sauce, and mushroom mix in a bowl. Divide mixture between potato shells.</li> <li>Add the rest of the grated cheese to the top of each shell.</li> <li>Bake for 15 minutes in moderate oven.</li> </ol>
