Easy potato cakes or healthy brown potato cakes

  • 2 tbsp butter

  • 1 pinch salt

  • 115g plain flour (use brown or wholemeal for a healthier option)

  • 1kg mashed potato


  1. Melt the butter and mix into the potatoes with the salt.
  2. Work in the flour quickly make sure well mixed a and knead lightly.
  3. Divide in 2 and roll out each half on a floured board to form a circle about the size of a large dinner plate.
  4. Cut in quarters or pieces, cook for about 3 minutes on each side in a heavy frying pan or grill for health option
  5. Replace flour with brown or wholemeal if desired!

Handy Hint

Serve with beans. The healthy option is great and gives kids sustained energy.
