Spinach and pesto lasagne

Ingredients

  • 500g spinach

  • 300ml milk

  • 150ml vegetable stock

  • 18oz green pesto, (a jar)

  • 40g plain flour

  • 0.5 tsp nutmeg

  • 1 box lasagne sheets

  • 40g butter, (plus a knob for frying mushrooms)

  • 75g Parmesan, grated

Method

  1. Preheat the oven to 180C.
  2. Put the spinach in a colander in the sink and pour boiling water over. Leave to wilt and cool then roughly chop up with scissors, squeeze water out.
  3. Fry the mushrooms in a knob of butter until golden.
  4. Melt the butter in a saucepan and add the flour. Stir and turn the heat down. Add milk and stock and keep stirring. Add nutmeg and 50g of the Parmesan.
  5. In a lasagne dish, put a layer of spinach. Then mushrooms. Then a layer of the sauce, then a few tablespoons of pesto blobbed about. Cover with lasagne sheets. Repeat. Finish with white sauce and a few blobs of pesto.
  6. Sprinkle over the rest of the Parmesan and grind a little black pepper over it.
  7. Cook in the oven for about 25 minutes and serve.

    Want to cook this but NO MUSHROOMS listed in ingredients. Will guess one punnet (150g)?

    Made this today. It was very quick and easy to assemble. I used frozen spinach and just left it to defrost in the fridge overnight. Delicious!

    Sorry. I tend to use chestnut mushrooms, a tub of them. Think about 250g, I have used normal mushrooms if unable to get chestnut ones.
