Ingredients

  • 225g self-raising flour

  • 1/4 tsp salt

  • 75g soft brown sugar

  • 1/4 tsp mixed spice, (or more, to taste)

  • 75g butter or margarine, chopped

  • 2 oranges, zested and juiced

  • 1 banana, mashed (1 large or 2 small)

  • 1 egg

Method

  1. Sift flour, salt and spice into bowl.
  2. Add butter/margarine and rub in until mixture resembles breadcrumbs.
  3. Stir in sugar and grated orange rind.
  4. Make a well in the centre and add the egg and mashed banana.
  5. Mix together, add enough orange juice to bind it all.
  6. Place 'rocky' heaps of the mixture on a greased or non stick baking tray.
  7. Bake in centre of oven for 15-20 minutes at 200C.

Handy Hint

Mixture should be sticky and firm, too sloppy and the cakes will flatten. If it seems too wet stir in a little more flour. Flat cakes still taste nice, but don't look like rocks!
