Orange and banana rock buns

  • 225g self-raising flour

  • 1/4 tsp salt

  • 75g soft brown sugar

  • 1/4 tsp mixed spice (or more, to taste)

  • 75g butter or margarine chopped

  • 2 oranges zested and juiced

  • 1 banana mashed (1 large or 2 small)

  • 1 egg


<ol> <li>Sift flour, salt and spice into bowl.</li> <li>Add butter/margarine and rub in until mixture resembles breadcrumbs.</li> <li>Stir in sugar and grated orange rind.</li> <li>Make a well in the centre and add the egg and mashed banana.</li> <li>Mix together, add enough orange juice to bind it all.</li> <li>Place 'rocky' heaps of the mixture on a greased or non stick baking tray.</li> <li>Bake in centre of oven for 15-20 minutes at 200C.</li> </ol>

Handy Hint

<p>Mixture should be sticky and firm, too sloppy and the cakes will flatten. If it seems too wet stir in a little more flour. Flat cakes still taste nice, but don't look like rocks!</p>

    Hi there, I want to go and make these... in the picture there are something that look remarkably like raisins in it?? Does one use raisins also?
