Sweet and sour pork (in the microwave)

Ingredients

  • 1 yellow pepper, chopped

  • 2 tbsp balsamic vinegar

  • 1 red onion, chopped

  • 200g pork fillet, diced

  • 2 tbsp soy sauce

  • 1 knob fresh ginger, thumb-sized, chopped thinly

  • 2 cloves garlic, chopped thinly or crushed

  • 1 bunch fresh coriander, chopped

  • 1 tsp chinese five spice, heaped

  • 1 tsp cornflour

  • 227g pineapple, tinned chunks

Method

  1. Put a good glug of oil in a microwave-proof dish, with the five-spice and pork, give it a good mix and microwave until the pork is cooked through, check every few minutes.
  2. Put the pork in a bowl to one side.
  3. Put the onion, pepper, ginger, garlic and coriander into the dish and microwave for 2 mins.
  4. Stir in the cornflour and soy sauce.
  5. Put the pineapple chunks (with juice), the cooked pork and the balsamic vinegar into the dish. Give it a real good stir, then put it back in the microwave for a few more minutes (until piping hot).
  6. Serve it with rice or couscous and lettuce.

Handy Hint

This can be cooked conventionally, on the hob, using a wok or large frying pan, but I find it quicker and easier to do in the microwave

    I tried this reciepe for the first time last night and enjoyed both cooking and eating it. I was suprised at how easy it was, and my fussy son even liked it! It is sweet and sour but it is subtle, nothing like the jars you get. Husband liked it too.
