  • 120g caster sugar

  • 1 tsp baking powder

  • 1 tsp vanilla essence

  • 120g soft brown sugar

  • 175g salted butter softened

  • 3 medium bananas mashed

  • 1 large eggs beaten

  • 250g plain flour

  • 175g banana chips broken into little pieces


<ol> <li>Preheat oven to 190C/Gas Mark 5.</li> <li>Grease a 3cm deep muffin tin/silicone mini loaf tin/silicone muffin tin or put muffin cases in your tin.</li> <li>Put butter and both sugars into a bowl and beat until light and fluffy.</li> <li>Gradually add the beaten egg ensuring each addition is well incorporated.</li> <li>Stir in the mashed banana and vanilla essence.</li> <li>Sift in the flour and baking powder and mix in.</li> <li>Add banana chips if you are using them. Mix in.</li> <li>Add spoonfuls of the mixture to your baking tin/cases until 3/4 full. This does not rise unduly.</li> <li>Bake 18-20 minutes then test for doneness. Keep in oven another minute if underdone.</li> <li>Cool then turn out and don't expect them to last longer than an hour- they are like cake crack.</li> </ol>

Handy Hint

<p>I always use silicone bakeware to make these, either a silicone muffin tray or a little mini silicon loaf tray that makes 12 little log shaped cakes. You may need to bake them for a few minutes more if you are using lighter coloured metal bakeware as darker tins bake quicker and produce a darker colour on the crust.</p>

    Just made these. Had to improvise a bit due to not having the correct ingredients. Used mostly butter but part Flora cuisine, whole meal flour and 2 large bandannas. Also added 100g of chic chips. I think white flour would definitely be better but these are still delicious. Need more like 30 mins in the oven though.

    I just made these to take to the schoolxmas fair. I made them as mini muffins without the banana chips but with a smidgeon of cinnamon; it made 48. They are moist, sweet with a lightly crunchy top - yum:)

    Budget if you leave out the banana chips. Can be adapted to gluten free flours. Crack cake! They will go in minutes.
