  • 2 tbsp olive oil

  • 1l chicken stock

  • 1 red onion, finely chopped

  • 2 red pepper, chopped into bite-sized pieces

  • 4 chicken thigh fillet, chopped into bite-sized pieces

  • 300g risotto rice

  • 250g cherry tomatoes

  • 2 cloves garlic, finely chopped

  • 200g chorizo, thickly sliced

  • 2 tsp fresh rosemary, chopped

  • 250g king prawns

  • 1 pinch saffron


  1. Preheat the oven to 220C/Gas Mark 7. Place the cherry tomatoes and red pepper in a roasting tin and sprinkle over the red onion, garlic and olive oil. Roast for 20 minutes until the tomatoes are softened.
  2. Stir in the rice, chicken, chorizo, rosemary, chicken stock, saffron and some salt and pepper, mixing well together. Return the paella to the oven for 20 minutes.
  3. Stir in the prawns and return the paella to the oven for a further 10-20 minutes until the rice is tender and the chicken is cooked through.

Handy Hint

Replace the prawns with a seafood mix if you're feeling a little more daring.
Add chilli if you'd like some spice.
Can be gluten free if you swap the chorizo and stock for GF versions.

    This is DH's favourite! DS wasn't so keen but did eat some of the rice and chicken. DH gives it 10/10, I think it's nice too :)

    Love it! Very easy and went down well with 2 year old and his parents! (I substituted prawns for chunks if plaice because of the 2yr old)

    This looks fab! Just a word of caution for people with milk allergies: chorizo often contains milk.

    Originally a recipe for baked risotto, I changed some of the ingredients and it turned into a lovely, easy Paella. Great for making when you're busy doing other things as you just need to add a few extra ingredients every 20 minutes. My 2 year old loves this.
