Easy paella

Ingredients

  • 2 tbsp olive oil

  • 1l chicken stock

  • 1 red onion finely chopped

  • 2 red pepper chopped into bite-sized pieces

  • 4 chicken thigh fillet chopped into bite-sized pieces

  • 300g risotto rice

  • 250g cherry tomatoes

  • 2 cloves garlic finely chopped

  • 200g chorizo thickly sliced

  • 2 tsp fresh rosemary chopped

  • 250g king prawns

  • 1 pinch saffron

Method

  1. Preheat the oven to 220C/Gas Mark 7. Place the cherry tomatoes and red pepper in a roasting tin and sprinkle over the red onion, garlic and olive oil. Roast for 20 minutes until the tomatoes are softened.
  2. Stir in the rice, chicken, chorizo, rosemary, chicken stock, saffron and some salt and pepper, mixing well together. Return the paella to the oven for 20 minutes.
  3. Stir in the prawns and return the paella to the oven for a further 10-20 minutes until the rice is tender and the chicken is cooked through.

Handy Hint

Replace the prawns with a seafood mix if you're feeling a little more daring.
Add chilli if you'd like some spice.
Can be gluten free if you swap the chorizo and stock for GF versions.

    Delish! Was a little daunted at first as I've never been a big fan of paella and my other half refuses to eat prawns so I knew I'd have to modify. In the end I used no seafood or fish and I'm glad I didn't because the amount made was, I think, suitable for 6. I swapped out one of the peppers for courgette just because I had some in the fridge and I only used about 150g of chorizo. I also cooked it a little lower (180 degrees) for slightly longer (55 mins once the rice was in). I was worried when it came out as there was more liquid than I imagined but I needn't have worried at all as it was just delish! Will be making again for sure.

    This is DH's favourite! DS wasn't so keen but did eat some of the rice and chicken. DH gives it 10/10, I think it's nice too :)

    Love it! Very easy and went down well with 2 year old and his parents! (I substituted prawns for chunks if plaice because of the 2yr old)

    This looks fab! Just a word of caution for people with milk allergies: chorizo often contains milk.

    Originally a recipe for baked risotto, I changed some of the ingredients and it turned into a lovely, easy Paella. Great for making when you're busy doing other things as you just need to add a few extra ingredients every 20 minutes. My 2 year old loves this.
