  • 1 tsp bicarbonate of soda

  • 1 tsp vanilla extract

  • 200g caster sugar

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 250ml vegetable oil

  • 2 eggs

  • 275g plain flour

  • 500g apples peeled, cored and diced


<ol> <li>Grease and flour a 20cm x 30cm tin.</li> <li>Preheat the oven to 180C.</li> <li>Beat vegetable oil and eggs until foamy.</li> <li>Add sugar, flour, cinnamon, bicarb, salt and vanilla extract.</li> <li>Mix well. Stir in the apple.</li> <li>Bake for 30-40 minutes at 180C.</li> </ol>

Handy Hint

<p>Ground mixed spice is also lovely as well as cinnamon.</p>

    Really moist cake with chunks of apple. Makes the house smell lovely when its cooking too!
