Ingredients

  • 1 tsp sugar

  • 2 tbsp vegetable oil

  • 2 tsp ginger, chopped

  • 1 tsp chilli bean sauce

  • 1 tbsp rice wine

  • 450g raw tiger prawns

  • 1 stalk lemon grass

  • 1 1/2 tsp madras curry paste

  • 2 cloves garlic, peeled and chopped

  • 1 pinch coriander, to garnish

  • 1 fresh chilli, chopped (or 1/2 tsp of dried chilli flakes)

  • 2 medium onions, chopped

  • 2 tsp light soy sauce

Method

  1. Peel and chop the lemon grass and add to the chilli, onion and garlic and fry over hot heat in a wok for a minute.
  2. Add prawns and stir fry for a minute.
  3. Add the liquids (ie everything else) and cook for 4 minutes.
  4. Garnish with coriander and serve with rice.
