Lentil and carrot dahl

  • 1/2 onion

  • 1 tbsp garam masala or any other curry powder, add more to taste

  • 1 clove garlic

  • 1 carrot

  • 1 handful lentils

  • 1/2 low salt stock cube


<ol> <li>Soak the lentils for 10 mins and remove the scummy froth stuff that rises to the top! Rinse thoroughly.</li> <li>Fry the onion in some olive oil with a little curry powder for few mins until browned.</li> <li>Peel the carrot and chop it into smallish cubes.</li> <li>Chuck in the carrot and lentils and fry on shallow heat for 2 min.</li> <li>Add enough stock or water to cover and stir it to mix.</li> <li>Cook on a low heat for about 15 mins or until mushy.</li> </ol>

Handy Hint

<p>serve with quinoa as a change from rice. <br />never do carrots in circles!</p>

    this is good to make extra for freezing. to make it more palatable for older kids or adults, add more spices or a load of chilli!
