Super quick banana and chocolate chip muffins

Ingredients

  • 225g self-raising flour

  • 1/2 tsp bicarbonate of soda

  • 150g caster sugar

  • 1/2 tsp baking powder

  • 125ml vegetable oil

  • 2 large eggs

  • 60g chocolate chips, (dark ones work really well)

  • 250g bananas, ripe and mashed with a fork

Method

  1. Preheat oven to 180C/Gas Mark 4.
  2. Cream the eggs, oil and sugar together in a bowl.
  3. Add flour, bicarb and baking powder until well combined. (you can sieve if baking with smalls and want to extend the activity but muffins don't need it).
  4. Stir in the mashed banana and the chocolate chips.
  5. Split the mixture between 12 muffin cases and bake for 30-40 minutes. They are done when nicely brown on top and spring back. You can use a skewer to check that they're cooked but remember the chocolate chips will have melted and this can make it hard to check properly.

Delicious when warm but equally good if they make it to a tin.

Handy Hint

Using the foil muffin cases help these stay fresher longer - can be used for lunch boxes or very popular as breakfast for my DH.
