Lentil and sweet potato soup

Ingredients

  • 2l stock

  • 2 tsp cumin seeds

  • 2 cloves garlic, optional

  • 2 medium potatoes, cubed

  • 500g red split lentils

  • 1 onions, chopped

  • 2 tsp coriander seeds

  • 400g sweet potato or butternut squash

  • 100g kale, chopped

Method

  1. Boil lentils in stock for 10 mins.
  2. Add the chopped onion and cubed vegetables to the lentils. Let simmer until tender.
  3. Add ground spices and garlic, if desired.
  4. Add the chopped kale and continue to simmer until the kale is cooked.
  5. Add salt or pepper to taste.

    very versatile as this recipe works with many substitutes. also one of few recipes all three of my kids and many adults like.
