Ingredients

  • 40g self-raising flour

  • 1 bag ginger

  • 1 tsp mustard powder

  • 1 tsp dried thyme

  • 300ml skimmed milk

  • 1 clove garlic crushed

  • 50g reduced fat cheddar cheese grated

  • 1 handful baby spinach

  • 15g low fat margarine

  • 15g plain flour

  • 2 slices lean bacon sliced into long thin strips

  • 150g Desiree potatoes (or another type of floury potato)

Method

  1. Preheat over to 190C or 170C for fan oven.
  2. Peel and chop the spuds and boil them for about 15 mins until tender (not falling apart cooked)
    Drain, mash, stir in thyme and crushed garlic.
  3. Bring another pan of water to the boil.
  4. Sprinkle work surface with 1 tbsp of flour and shape the potato into a long thin sausage about 1 inch in diameter.
  5. Cut into 1.5 cm lenghs (it says 1 inch but this is WAY too big).
  6. Rest the gnocchi on your finger and press down on one side with the prongs of a fork.
  7. When you've pronged all your gnocchi (ooh missus) place in large pain of boiling water and cook for 2-3 minutes until it rises to top of pan.
  8. Remove with slotted spoon and put into an oven proof dish. They've used a square Le Creuset type of thing. It doesn't need to be very big.
  9. For the sauce, melt the marg gently then take off the heat and stir in the flour and mustard powder, like you're making a bechamel style sauce.
  10. Then stir in the milk a tiny bit at a time. Be warned, it REALLY wants to go lumpy so I did end up straining mine even though I consider myself an expert…it's probably lack of fat and the addition of mustard powder.
  11. When you have a thickened sauce, stir in half the cheese and the handful of spinach.
  12. Spoon the sauce over the gnocchi and then scatter the remaining cheese over the top.
  13. Then lay the bacon strips over the top in an interesting artistic fashion (I made that bit up, you can do it anyhow).
  14. Put in oven for 20 mins. Take it out once it has browned and looks tasty. Mine took 25 mins. Eat it, love it. grin
