Pea and mint soup

  • 1 onion peeled and chopped

  • 3/4 pints vegetable stock

  • 750g frozen peas

  • 2 tsp mint sauce


<ol> <li>Sweat the onion in a saucepan in a little oil for about 3 minutes.</li> <li>Add peas from frozen and slowly heat them with the onions until they are defrosted and warming up nicely.</li> <li>Add vegetable stock - stock cubes or vegetable bouillon are ideal - and simmer for 15 minutes.</li> <li>Blend soup with hand held blender. Then add seasoning, milk to taste and mint sauce.</li> </ol>

Handy Hint

<p>Serve immediately. If using soya milk this soup is best eaten the same day.</p>

    This is a quick and easy vegetarian recipe. Great for family suppers. I am a new convert to vegetarianism and this has been a lifesaver on many occasions.
