Ingredients

  • 1 spring onion chopped

  • 3 tins tuna

  • 1 tin sweetcorn optional

  • 375g pasta

  • 1/2 tbsp butter

  • 1/2 tbsp plain flour

  • 2 tbsp Parmesan grated

  • 460-600ml milk

  • 40g Doritos

  • 1 tsp dried mushrooms crushed - or mushroom soup mix,

Method

  1. Preheat oven to 180C.
  2. Cook pasta, drain and place in casserole dish.
  3. Melt butter in saucepan.
  4. Add plain flour and stir, to make a paste.
  5. Add milk slowly and mix in for about 5 minutes or
    until sauce thickens.
  6. Add grated Parmesan cheese, chopped spring onion, corn kernels, dried mushrooms or mushroom soup mix and 3 tins of tuna.
  7. Add sauce to casserole dish and mix into pasta.
  8. When ready to serve - add crushed Doritos on top, cover with foil and cook for about 20-30 minutes or until heated through - slightly longer if made previously and stored in refrigerator.

    My kids love this recipe. Many tuna casserole recipes call for crumbled up crisps on top but my kids love it with Doritos crumbled on top.
