Soy and honey citrus turkey

Ingredients

  • 1 tbsp flour

  • 3 tbsp runny honey

  • 1 orange, zested and juiced

  • 2 tbsp mustard

  • 2 tsp minced garlic

  • 2 tbsp sunflower oil

  • 200g broccoli, cut into small florets

  • 4 tbsp soy sauce

  • 2 large carrots, thinly sliced

  • 500g turkey fillets, cut into strips

  • 2 large peppers, cut into chunks

  • 2 tsp minced ginger

Method

  1. Mix together the soy sauce, orange rind and juice, honey and mustard. Stir in the turkey and set aside.
  2. Heat the oil in a wok or frying pan and stir-fry the carrots and broccoli for 3 minutes over a high heat.
  3. Remove the turkey and add to the wok, reserving the marinade. Add 2 tbsp water, the minced garlic and ginger and pepper and stir-fry for 6 minutes.
  4. Mix flour with the reserved marinade to a smooth sauce, pour over the turkey mixture and stir-fry for 2 minutes until the veggies are tender. Serve with noodles or rice.
