Quick Thai low-fat salad

Ingredients

  • 2 tbsp balsamic vinegar

  • 2 tbsp dark soy sauce

  • 0.5 bags salad, (crunchy)

  • 50g sprouting beans

  • 1 tsp coriander paste

  • 0.5 tsp brown sugar

  • 1 carrot, grated

  • 2 handfuls beansprouts

  • 0.5 orange pepper, chopped

  • 0.5 red apple, grated

  • 0.5 tsp Thai green curry paste

Method

  1. Put the salad leaves, beansprouts and sprouting beans into a large bowl.
  2. Add the pepper, carrot and apple to the bowl.
  3. Mix the soy sauce, balsamic, coriander paste in a small bowl or mug, adding the sugar and Thai curry paste according to taste.
  4. Add the dressing to the salad just before serving.

    oops - recipe should also say a small handful of unsalted cashew nuts (about 30g). Add at same time as dressing. Therefore recipe is NOT NUT FREE.

    Have never tried this on children so can't comment on its success with them, but very popular with my adult friends.
