Quick Thai low-fat salad

Ingredients

  • 2 tbsp balsamic vinegar

  • 2 tbsp dark soy sauce

  • 0.5 bags salad (crunchy)

  • 50g sprouting beans

  • 1 tsp coriander paste

  • 0.5 tsp brown sugar

  • 1 carrot grated

  • 2 handfuls beansprouts

  • 0.5 orange pepper chopped

  • 0.5 red apple grated

  • 0.5 tsp Thai green curry paste

  • 30g cashew nuts

Method

  1. Put the salad leaves, beansprouts and sprouting beans into a large bowl.
  2. Add the pepper, carrot and apple to the bowl.
  3. Mix the soy sauce, balsamic vinegar and coriander paste in a small bowl or mug, adding the sugar and Thai curry paste according to taste.
  4. Add the dressing and the cashews to the salad just before serving.

    Have never tried this on children so can't comment on its success with them, but very popular with my adult friends.
