Ingredients

  • 1/2 vegetable stock cube

  • 1 large onion, peeled and chopped

  • 1 tin chopped tomato

  • 1kg neck lamb fillet

  • 2-3 carrot

  • 200g mushrooms, sliced

Method

  1. Chop the lamb and lightly dust with flour.
  2. Fry (until just browning) with chopped onion and chopped mushrooms.
  3. Add the tomatoes and finely chopped carrots.
  4. Tip into casserole dish, fill up with vegetable stock.
  5. Put in pre-heated oven 200C/Gas Mark 6 for 1 1/2 hrs. Serve with potatoes or rice.
