  • 1/2 vegetable stock cube

  • 1 large onion peeled and chopped

  • 1 tin chopped tomato

  • 1kg neck lamb fillet

  • 2-3 carrot

  • 200g mushrooms sliced


<ol> <li>Chop the lamb and lightly dust with flour.</li> <li>Fry (until just browning) with chopped onion and chopped mushrooms.</li> <li>Add the tomatoes and finely chopped carrots.</li> <li>Tip into casserole dish, fill up with vegetable stock.</li> <li>Put in pre-heated oven 200C/Gas Mark 6 for 1 1/2 hrs. Serve with potatoes or rice.</li> </ol>
