Celeriac soup

  • 450ml chicken stock, or enough to cover - use vegetable if you like

  • 2 cloves garlic, crushed

  • 40g butter, an indecent amount!

  • 1 tsp salt

  • 1 celeriac, diced


  1. Sweat the celeriac and garlic in the butter over a low heat for 5 minutes or so.
  2. Add stock to cover.
  3. Simmer until the celeriac is soft, about 30 minutes.
  4. Whizz it up with a blender.

Handy Hint

You can finish it off with crispy bacon bits, chopped chestnuts or a twirl of truffle oil if you're feeling right posh.
