250 g self-raising flour
125 g butter
100 g caster sugar
1 tsp baking powder
3 eggs, beaten
4 banana, mashed
- Preheat oven to 180C/Gas Mark 4. Line or grease a 1lb loaf tin.
- In a bowl, add baking powder to flour. Add butter and rub in to make breadcrumbs.
- In a separate bowl beat eggs and in a third bowl mash bananas. Add eggs, banana and caster sugar to breadcrumbs and mix together.
- Pour into loaf tin and cook for 50-60 minutes.
Use bananas that are over-ripe.
