Ingredients

  • 1 splash olive oil

  • 1 vegetable stock low salt preferable

  • 1 clove garlic

  • 5 potatoes medium sized

  • 2 leeks or 1 onion, chopped

  • 2 bags watercress

  • 1 broccoli

Method

  1. Fry leeks or onion in olive oil with garlic until golden.
  2. Add stock.
  3. Add watercress, broccoli and potatoes.
  4. Boil for 25 minutes until potatoes are cooked.
  5. Season with pepper.
  6. Blend with hand blender.
  7. Serve.
