Simple one-pan tuna bake

Ingredients

  • 75g cheddar, grated

  • 1 red onion, sliced

  • 2 tins tuna, drained

  • 198g sweetcorn

  • 4 tbsp chives, chopped

  • 4 tbsp low fat mayonnaise, (or creme fraiche)

  • 750g frozen potato wedges

Method

  1. Heat the oven to 200C/Gas Mark 6.
  2. Put the potato wedges into an oven-proof dish and bake for 15-20 minutes until crispy.
  3. Mix the tuna with the red onion, mayonnaise and chives and season. Spoon the tuna mix over the wedges, combining it slightly.
  4. Top with cheddar and bake for 10-12 minutes until the cheese is melted and golden.

    Very yummy and a good way to add some fish to our diet. We didn't have wedges so just used boiled potatoes and then baked them with some oil and pepper. A great store cupboard recipe

    A Brilliant store cupboard standby that is so EASY yet really hearty & filling. The potato wedges make a great alternative to pasta.
