Several large tomatoes, cut into slices
1 ready-made puff pastry
1 ball buffalo mozzarella, cut into chunks
- Take a sheet of puff pastry and score round the edges.
- Smother pesto over the base, then top with slices of tomato and chunks of mozzarella.
- Bake in a pre-heated oven at around 180C until the pastry is risen and golden. This will take about 20 minutes, but check regularly.
- Serve with crisp salad.
If you have time try making your own pesto using pine nuts, parmesan cheese, basil, olive oil, garlic and lemon juice. It really makes a difference to the flavours.
