Spicy apple and hard-boiled egg salad

Ingredients

  • 1/2 tsp salt

  • 1 tsp sugar

  • 1 1/2 tbsp lime juice

  • 2 fresh chillies finely sliced

  • 1 tbsp thin soy sauce or fish sauce

  • 1 tbsp palm sugar

  • 3 large eggs

  • 3 shallots peeled and finely sliced

  • 1/2 large apple peeled, thinly sliced and shredded

  • 25g dried shrimp

  • 1 sprig coriander finely sliced

Method

  1. Boil the eggs for about 10 minutes or until cooked. Remove the eggs from their shells, cut in halves and arrange in a serving plate.
  2. Soak the apple in cold salted water (mix 1/2 tsp salt and 500 ml cold water) for 5 minutes to prevent oxidation. Drain, rinse in cold water, pat dry and set aside.
  3. Prepare the dressing by mixing lime juice, thin soy sauce or fish sauce, sugar, palm sugar, and sliced chillies in a mixing bowl. Adjust the flavour to suit your taste.
  4. In a large mixing bowl, mix the shredded apple, sliced shallots, sliced coriander, ground dried shrimps, and dressing, then mix thoroughly.
  5. Put the salad in a serving bowl, and serve immediately with hard-boiled egg.
