Spicy apple and hard-boiled egg salad

  • 1/2 tsp salt

  • 1 tsp sugar

  • 1 1/2 tbsp lime juice

  • 2 fresh chillies finely sliced

  • 1 tbsp thin soy sauce or fish sauce

  • 1 tbsp palm sugar

  • 3 large eggs

  • 3 shallots peeled and finely sliced

  • 1/2 large apple peeled, thinly sliced and shredded

  • 25g dried shrimp

  • 1 sprig coriander finely sliced


<ol> <li>Boil the eggs for about 10 minutes or until cooked. Remove the eggs from their shells, cut in halves and arrange in a serving plate.</li> <li>Soak the apple in cold salted water (mix 1/2 tsp salt and 500 ml cold water) for 5 minutes to prevent oxidation. Drain, rinse in cold water, pat dry and set aside.</li> <li>Prepare the dressing by mixing lime juice, thin soy sauce or fish sauce, sugar, palm sugar, and sliced chillies in a mixing bowl. Adjust the flavour to suit your taste.</li> <li>In a large mixing bowl, mix the shredded apple, sliced shallots, sliced coriander, ground dried shrimps, and dressing, then mix thoroughly.</li> <li>Put the salad in a serving bowl, and serve immediately with hard-boiled egg.</li> </ol>

    Apple, sugar and palm sugar are not low carb....
