Ingredients

  • 3 chicken breast, chopped

  • 1 tbsp balsamic vinegar

  • 1 tin chopped tomato

  • 1 red onion, diced

  • 1 handful herbs, chopped

  • 1 tin mixed beans

Method

  1. Spray pan with oil.
  2. Fry chicken until cooked.
  3. Remove and cook onion in same pan.
  4. Chicken back in and add tomatoes and beans.
  5. Add balsamic vinegar and herbs.
  6. Simmer for 10 minutes. Serve with green salad and couscous.

Handy Hint

Can use thighs for a cheaper meal.

    easy peasy one pan cooking. also good on a jacket potato.
