Curried cauliflower soup

  • 1 tbsp curry powder

  • 1 leek

  • 1l vegetable or chicken stock

  • 1kg frozen cauliflower


<ol> <li>Fry the leek in a little oil and butter until it is soft. Add curry powder and fry for 30 seconds.</li> <li>Add the stock and cauliflower and cook until the cauliflower is softened.</li> <li>Blitz in a blender or with one of those brilliant hand held ones.</li> <li>Serve with a swirl of cream and some sprigs of fresh coriander</li> </ol>

    Bloody delicious! Somehow I made sludge not soup but it was still amazing. Really easy to make. Yum, yum, yum!

    Really nice, I added some light cream and seasoned with some red and black pepper. Will be making this again!

    gorgeous silky texture and really filling. I used cumin instead of curry powder.
