  • 450g self-raising flour

  • 225g brown sugar

  • 835g mixed fruit

  • 1 large eggs (lightly beaten with 1 tbsp of milk)

  • 275ml strong tea (black)


<ol> <li>Add the fruit and the sugar to the tea and leave it to soak overnight.</li> <li>Pre-heat the oven to 170C.</li> <li>Add the egg to the mixture and sift in the flour. Mix thoroughly.</li> <li>Divide the mixture between two greased loaf tins and bake for between 1 1/4 and 1 1/2 hours, or until a knife comes out clean when inserted into the centre.</li> </ol>

Handy Hint

<p>A dash of whiskey added to the soaking fruit adds a lovely flavour.</p>

    I add a teaspoon of Mixed Spice, and just use sultanas because of picky DCs. Plus, *always* serve buttered.
