  • 110g caster sugar

  • 1 orange, zested

  • 1 lemon, zested

  • 75g soft butter

  • 1 large eggs, beaten

  • 50g walnuts, chopped

  • 225g plain flour

  • 2 banana, peeled

  • 2 tsp baking powder, (level)


  1. Preheat the oven to 180C/Gas Mark 4.
  2. Grease a loaf tin, also line the base.
  3. Place butter, sugar and egg in a mixing bowl, sift in flour and baking powder. Whisk together all the ingredients, don't worry if it looks too dry at this stage.
  4. Add mashed bananas, orange and lemon rinds and walnuts. Mix thoroughly and add to prepared tin.
  5. Bake in the centre of the oven for 50-55 minutes, until it is golden, well risen and springs back. Leave to cool for 10 minutess then remove from the tin.
