  • 110g caster sugar

  • 1 orange zested

  • 1 lemon zested

  • 75g soft butter

  • 1 large eggs beaten

  • 50g walnuts chopped

  • 225g plain flour

  • 2 banana peeled

  • 2 tsp baking powder (level)


<ol> <li>Preheat the oven to 180C/Gas Mark 4.</li> <li>Grease a loaf tin, also line the base.</li> <li>Place butter, sugar and egg in a mixing bowl, sift in flour and baking powder. Whisk together all the ingredients, don't worry if it looks too dry at this stage.</li> <li>Add mashed bananas, orange and lemon rinds and walnuts. Mix thoroughly and add to prepared tin.</li> <li>Bake in the centre of the oven for 50-55 minutes, until it is golden, well risen and springs back. Leave to cool for 10 minutess then remove from the tin.</li> </ol>
