Ingredients

  • 1 onion

  • 1 splash olive oil

  • 1 pint vegetable stock

  • 150g smoked bacon

  • 1 tsp paprika

  • 200g red lentils

  • 3 cloves garlic

  • 1 pepper

  • 6 large carrots

Method

  1. Chop all vegetables into medium sized chunks and add to the pan with the olive oil and gently cook for 10 minutes.
  2. Add the boiling vegetable stock and lentils and cook for a further 15 minutes.
  3. Chop the bacon.
  4. Using a hand blender blend the mix in the pan. Add the paprika.
  5. Add the bacon and cook for 5 minutes.
